Essentially, single origin means that the chocolate is made using cacao beans from one specific place or “origin.” This is something special because most chocolate is made up of a blend of beans from different countries. Commercial chocolate sells at such a low price that these blends often need to be from relatively bad quality beans, blended and roasted at a very high temperature to mask the off-flavors. Truly is made with single origin beans, and our speciality is sourcing from Latin America, although we do have a bar from Madagascar too! We do not buy bulk beans or make blends. This is not to say that blends can not be good. There are some craft chocolate makers whose blends are fantastic. At Truly, we want you to be able to taste the place. Much like wine, the soil profile, climate, fermentation and drying all play a role in giving each origin its distinctiveness. Terroir! Beans from Ecuador are often very fruity, while beans from Tanzania will be earthy. Nicaragua often has nutty qualities, while beans from the Dominican Republic are known to be bright and fruity.

Aus dem Englischen übersetzt heißt es wortwörtlich „eine einzige Herkunft“ oder „ein einziger Ursprung“ und es bedeutet, dass die Schokolade aus Kakaobohnen gemacht wurde, die nur von einem einzigen Anbaugebiet stammen. Das ist etwas Besonderes, denn ein Großteil der Schokolade auf dem Markt wird mit einem Gemisch aus Bohnen aus verschiedenen Ländern und oft sogar Kontinenten gemacht. ​ TRULY Schokoladen bestehen ausschließlich aus Single Origin-Bohnen, unsere Spezialität sind Bohnen aus Lateinamerika – obwohl wir auch eine Bar aus Madagaskar haben! Wir kaufen weder Bohnen aus Massenproduktion noch machen wir Bohnenmischungen. Das heißt nicht, dass es keine guten Bohnenmischungen gibt, im Gegenteil. Manche Hersteller von Craft Chocolate haben hervorragende Mischungen. ​ Wir wollen aber, dass man bei unserer Schokolade den Ort (oder Terroir), an dem die Kakaobohnen gereift sind, auch schmecken kann. Es ist wie bei Wein. Die Beschaffenheit des Bodens, das Klima, die Fermentations- und Trocknungsmethoden der Früchte – all das hat einen Einfluss auf den Geschmack. Beim Weinanbau nennt man das „Terroir“: die Gesamtheit natürlicher Faktoren und kultureller Einflüsse, die dem Wein seinen Charakter verleihen. Bohnen aus Ecuador sind beispielsweise oft sehr fruchtig, während Bohnen aus Tansania einen erdigen Anklang haben. Nicaragua hat oft nussige Qualitäten und Bohnen aus der Dominikanischen Republik sind für ihre hellen und fruchtigen Noten bekannt.

Bean to bar is the term used to describe chocolate that is made straight from the cacao bean. Often this is also referred to as "craft chocolate". You might be asking yourself: doesn't all chocolate come from a cacao bean? and yes, you are right! It does! or at some point in its life time, it did! However, a lot of chocolatiers buy a bulk source of finished chocolate (in the form of chips, or slabs) and simply melt it down to craft their chocolates and confections. Bean to bar makers such as ourselves are devoted to the process. We start with sourcing our beans consciously and hand sort, roast winnow, stone grind, conche, temper, and mould all of our chocolate in our very own kitchen just outside of Munich. We also work in very small batches of about 20 kilo at the absolute most. A batch from the bean to the bar will take roughly one week to produce, not counting the ageing time of a couple of months. We are all familiar with the craft beer movement and craft coffee too. At Truly, we hope to put bean to bar chocolate on the map in Germany!

“Bean to Bar” ist die Bezeichnung für Schokolade, die direkt aus der Kakaobohne hergestellt wird. Im Gegensatz zu Schokolade, die aus Kakaomasse oder Kuvertüre gemacht wird. Viele Chocolatiers kaufen große Mengen an Kakaomasse und Kuvertüre und schmelzen diese einfach ein, um ihre Schokoladen herzustellen. „Bean to Bar“-Hersteller widmen sich hingegen dem gesamten Prozess, von der Bohne (bean) zur Schokoladentafel (bar). Wir bei sie. Wir bei Truly beziehen unsere Kakaobohnen mit Bedacht aus kleinen, biologisch nachhaltigen Betrieben und Kooperativen, sortieren die Bohnen von Hand, rösten, knacken und mahlen sie. Wir konchieren, temperieren und gießen sie in Form in unserer eigenen Manufaktur vor den Toren Münchens. (Wie das genau funktioniert, könnt Ihr auch im Blog nachlesen) Wir stellen in kleinen Mengen her. Eine Charge hat ein Gewicht von etwa 20 Kilogramm. Die Herstellung so einer Charge von der Bohne bis zur Tafel dauert zirka eine Woche – hinzukommt der Reifeprozess von einigen Monaten, den die Schokoladen nach der Herstellung durchlaufen. Das Ergebnis ist „Craft Chocolate“, handgefertigte Schokolade.

Actually, good craft chocolate does not really expire, however as producers we are required by law to put a used-by-date on our packaging. While some chocolate may start to lose a bit of their interesting flavours after a year or so, other chocolate, can actually improve with time. The MHD is just a guideline or suggestion, but not a definitive expiration date. If you store your chocolate properly in a cool, dry location between 14 and 16 degrees Celsius, it will last a long time. Your self-control is another issue 😊 Improper storing, for example if the temperature fluctuates too much, can cause bloom. These are grey patches or white streaks which make the chocolate look less beautiful, and the mouthfeel seem more brittle. The chocolate will still be edible, it simply lost its temper. This is not mould!

Craft Chocolate läuft nicht wirklich ab, allerdings sind wir als Hersteller gesetzlich dazu verpflichtet, ein Mindesthaltbarkeitsdatum (MHD) auf die Verpackung zu drucken. Das MHD ist nur eine Richtlinie, ein Vorschlag, aber kein definitives Ablaufdatum. Manche Schokoladen können nach einem Jahr etwas von ihren interessanten Aromen verlieren, doch der Großteil unserer Schokoladen kann mit der Zeit sogar besser werden. ​ Falsche Lagerung –zum Beispiel bei stark schwankenden Temperaturen– kann zu Fettreif oder Zuckerreif führen. Das sind graue Flecken oder weiße Streifen auf der Oberfläche der Tafel. Sie sind vielleicht unschön und die Stücke haben ein spröderes Mundgefühl, aber das ist kein Schimmel! Die Schokolade bleibt essbar. ​ Wenn sie die Schokolade an einem zwischen 14 und 16 Grad Celsius kühlen, trockenen Ort lagern, hält sie sehr lange. Ob Sie hingegen so lange aushalten, die Schokolade nicht zu essen, ist eine andere Frage…

Let's use 70% chocolate as an example. This means 70% of the ingredients come from the cacao bean – cacao solids and cacao butter. The rest come from other ingredients such as sugar, vanilla, nuts, lecithin’s (which create a creamier mouthfeel). A lot of chocolate actually contains very little cacao solids. To be called “chocolate” in the U.S. for example, a bar has to be at least 10 % cacao. Only. It is important to reiterate that the 70% that comes from the cacao bean also includes additional cacao butter which is added. It is never specified on the packaging or ingredients label how much of the 70% is cacao solids (beans) and how much of that 70% is extra added cacao butter. By nature, a cacao bean has cacao butter in it. Depending on the origin, about 50% of the bean is actually cacao butter. This is why we at Truly do not add extra cacao butter to our bars. We do not want to “dilute” the flavour. We also want you to be able to Taste the Place! and a lot of cacao butter has a flavour of its own, and may not come from the same origin as our beans do! We want to work with what mother nature has given us. So when our chocolate says 70% this means 70% pure cacao solids, no added cacao butter. The rest is made up of organically certified cane sugar. We do not even add vanilla. And also we do not add lecithin’s, emulsifiers or other inclusions to any of our bars.

Wenn auf einer Schokolade die Angabe „70 %“ steht, sind 70 % der Zutaten aus Kakaobohne gewonnen. Die restlichen 30 Prozent setzen sich aus anderen Zutaten zusammen wie Zucker, Vanille, Nüssen und Lecithine (die ein cremigeres Mundgefühl hervorrufen). ​ Von Natur aus enthält eine Kakaobohne Kakaobutter. Je nach Herkunft sind etwa 50 % der Bohne Kakaobutter, die zusammen mit den festen Bestandteilen der Bohne zu Kakaomasse vermahlen wird. Steht auf einer herkömmlichen Schokolade „70 %“, gehören zu diesen 70 Prozent nicht nur die Kakaomasse, in der Kakaobutter enthalten ist, sondern auch zugekaufte Kakaobutter, die der Masse nachträglich beigemischt wird. Das Mengenverhältnis lässt sich nicht auf der Verpackung nachlesen. ​ Ein großer Teil der herkömmlichen Schokolade enthält erstaunlich wenig Kakaomasse. In den USA muss eine Tafel nur mindestens 10 Prozent Kakaomasse enthalten, um als „Schokolade" bezeichnet werden zu dürfen. Wir bei Truly fügen keine zusätzliche Kakaobutter hinzu. Wir wollen mit dem arbeiten, was Mutter Natur bereitstellt. Das ist ohnehin perfekt. Wenn auf unserer Schokolade „70 %“ steht, dann sind das auch 70 % reine Kakaomasse – und keine zugesetzte Kakaobutter. Der Rest besteht aus biologisch zertifiziertem Rohrzucker. Wir fügen nicht einmal Vanille hinzu. Lecithine, Emulgatoren oder andere „Zutaten“ kommen bei uns ohnehin nicht in die Tafel.

A lot of us are familiar with the already popular craft markets of craft beer and craft or speciality coffee. Sadly, and for some reason, the craft chocolate movement in certain parts of the world has been slower to catch on. But it follows the same principle as other "craft" markets: focus on transparency when and where possible sourcing directly, creating things in small batches with truly the best ingredients possible, while focusing on proper craftsmanship. Going "back to the roots" to craft a product which you savor rather than devour. And this, as with beer or coffee too, is what sets craft chocolate aside from commercial chocolate, mostly found in supermarkets. Let's start with the ingredients: industrial or commercial chocolate, as well as chocolate made by some smaller suppliers, has a long list of ingredients. As you may know, ingredients are listed by highest to lowest amount used. Meaning, the first ingredient is what the majority of the product is made up of. A lot of chocolate will have “sugar” listed as the first ingredient, meaning the bar is made up of mostly sugar, which is a cheap additive. In many cases, cacao butter will be replaced by cheaper vegetable fats, and real vanilla is replaced by cheap synthetic alternatives such as vanillin or aroma. That being said, larger commercial makers have been seeing the success of craft chocolate makers using limited ingredients in their chocolate. You can find commercial chocolate with limited ingredients. But the difference is that these products are made in bulk, from bulk cacao with no emphasis on quality at any stage of the process. Truly is made in small batches, literally by hand, from fine flavor cacao (not bulk cacao) and there is a lot of emphasis on quality at every step, primarily when it comes to roasting. Truly is made with only two ingredients: starting with whole cacao beans (which we process ourselves) and organically certified cane sugar. Not only do we source fine flavor cacao beans, but we also focus on what we refer to as "truly traded". We source from trusted partners and pay 2-4 times (sometimes even more!) the fair trade market price for our cacao. Our partners work directly with cacao farmers, our beans are traceable & transparent! Aside from the purity and quality of ingredients, Truly is a handmade product. From hand sorting the beans to hand wrapping every individual bar, we do all the work ourselves in our kitchen just outside of Munich with a lot of dedication and care. One small batch of chocolate bars will take us at least a week from hand-sorting the beans to hand-wrapping and packaging the bars. In between this week, we age our chocolate for about 2 months.

Das hat viele Gründe. Beginnen wir bei den Zutaten: Industrie- oder Handelsschokolade hat, genauso wie Schokolade einiger kleinerer Lieferanten, eine lange Liste an Zutaten. Diese werden ihrer Verwendungsmenge nach auf der Verpackung aufgelistet – das Produkt besteht also aus der zuerst angeführten Zutat. Bei sehr vielen Schokoladen steht an erster Stelle Zucker. Das bedeutet, dass die Tafel hauptsächlich aus Zucker besteht und herkömmlicher Zucker ist billig. Oft wird überdies die Kakaobutter durch billigere pflanzliche Fette und die echte Vanille durch billige synthetische Alternativen wie Vanillin oder Vanille-Aroma ersetzt. ​ Truly Schokolade besteht aus lediglich zwei Zutaten: single origin fine flavour Kakaobohnen und aus Bio-Rohrzucker. Wir fügen unseren Produkten keine zusätzliche Kakaobutter hinzu. Deshalb haben unsere Schokoladen einen sehr reinen und sehr hohen Kakaogehalt. Und die Kakaobohne ist die teuerste Zutat. ​ Wir fügen weder Vanille noch andere Zutaten bei, und selbstverständlich benutzen wir keine Emulgatoren oder Lecithine. Unser Ziel ist es, dass Schokoladenfans die Herkunft der Kakaobohnen, das Terroir, schmecken können. Deshalb arbeiten wir nur mit einer weiteren Zutat: Bio-Rohrzucker (und der kostet auch mehr als herkömmlicher Zucker). Denn alle anderen Beigaben verfälschen den Geschmack. Genau wie bei unserem TRUE & 12-Eis, wollen wir mit Truly Schokolade so nah wie möglich zum Ursprung, zur Natur zurückkehren. Wir sind der Meinung: weniger ist mehr. Truly ist ein handgemachtes Produkt. Von der Verlesung der Bohnen bis zur Verpackung der einzelnen Tafeln erledigen wir die gesamte Arbeit mit viel Engagement und Sorgfalt in unserer kleinen Manufaktur nahe München. Für eine kleine Charge an Schokoladetafeln benötigen wir mindestens eine Woche Herstellungszeit. Darüberhinaus lassen wir unsere Schokoladen ungefähr zwei Monate lang reifen. ​ Die Reinheit und Qualität der Zutaten, der individuelle Herstellungsprozess, die Zeit und Liebe, die in jede Tafel fließt – das macht Truly Schokolade so viel wertvoller als die Schokotafeln aus dem Supermarkt.

Craft chocolate is good. In moderation. The general rule of thumb is: the darker the chocolate (less sugar added), the better the health benefits are. Truly is two ingredient chocolate, so our cacao content is prominent. And cacao is indeed an absolute superfood. Our process focuses on low roasting, which also helps protect cacao’s natural superfood qualities. High roasts (this applies to any food) destroy the positive qualities. Craft chocolate, especially TRULY with its low roast and limited ingredients, is packed with health benefits. Some of these include but are not limited to: - cacao has a high ORAC score, higher than most of the superfoods we know of. ORAC scores measure the ability of antioxidants to absorb free radicals (that come from pollution and toxins in our environment), which cause cell and tissue damage and can lead to diseases such as cancer. Raw cacao has an amazing ORAC score of 98,000 per 100g, vs blueberries at a mere 2,400. - Cacao is the highest plant-based source of iron known to man, at a whopping 7.3mg per 100g. This compares to beef and lamb at 2.5mg, and spinach at 3.6mg. - raw cacao has the highest plant-based sources of magnesium. Magnesium is important for a healthy heart, and helps turn glucose into energy, enabling your brain to work clearly! - Cacao is a great source of four scientifically proven bliss chemicals – serotonin, tryptophan, tyrosine and phenylethylamine. These neurotransmitters are associated with cosy feelings of wellbeing, happiness, and can even alleviate depression. A natural, healthy, delicious (and legal) way to get your happy buzz on. - the polyphenols naturally present in cacao have been linked to numerous health benefits, including reduced inflammation, better blood flow, lower blood pressure and improved cholesterol and blood sugar levels as with all things in life: enjoy them in moderation. Truly is made to be enjoyed slowly, and not devoured in one day :)

In Maßen genossen, ist Craft Chocolate sogar gesund! Die Faustregel: Je höher der Kakaoanteil (%) die Schokolade, desto weniger Zucker und desto gesünder. ​ Truly Schokoladen bestehen nur aus zwei Zutaten: Kakaobohnen und Bio-Rohrzucker. Der Kakaogehalt unserer Schokoladen ist sehr hoch – vor allem weil wir keine Kakaobutter mit hinzufügen. Und Kakao ist ein Superfood. Durch unsere schonenden Röstungen erhalten wir die Eigenschaften, die den Kakao zum Superfood machen. ​ Zum Beispiel: ​ - Kakao hat einen höheren ORAC-Wert als die meisten Superfoods. Er ist also reich an Antioxidantien, die freie Radikale unschädlich machen. Zum Vergleich: roher Kakao hat einen ORAC-Wert von 98.000 pro 100 g, Blaubeeren liegen bei „nur“ 2.400 ​ - Kakao ist mit 7,3 mg pro 100 g die beste Eisenquelle, die uns bekannt ist. Zum Vergleich: 100 Gramm Rindfleisch beinhalten 2,5 mg Eisen, Spinat bringt es auf 3,6 mg. ​ - Rohkakao enthält das meiste Magnesium auf pflanzlicher Basis. Magnesium ist wichtig für ein gesundes Herz und hilft dabei, Glukose in Energie umzuwandeln, was wiederum die Gehirntätigkeit unterstützt. ​ - Kakao macht wissenschaftlich bewiesen glücklich! Regelmäßiger Konsum von Kakao fördert die Ausschüttung von Neurotransmittern wie Serotonin, Endorphine und Phenylethylamin, die die Stimmung regulieren und erhellen und entspannend wirken. ​ - Kakao enthält Polyphenole, die mit zahlreichen gesundheitlichen Vorteilen in Verbindung gebracht werden: entzündungshemmend, durchblutungsfördernd, blutdruckregulierend und förderlich für die Verbesserung des Cholesterin- und Blutzuckerspiegels ​ Wie bei allen Dingen im Leben gilt auch hier: In Maßen genießen ist der Schlüssel zum Glück. Aus diesem Grund wiegt eine Truly-Schokoladentafel lediglich 45 Gramm, teilbar in zwölf kleine Stücke – perfekt, um sie langsam zu genießen. Unsere Empfehlung: ein Stück pro Tag langsam auf der Zunge zergehen lassen.

Cacao can very broadly be separated into two types: bulk and fine flavour. This has been put very simply, as there are a lot of factors which contribute to quality of cacao, however as mentioned above, what separates craft chocolate from commercial chocolate generally starts with the sourcing. As mentioned earlier, bulk cacao is used for commercial cacao, regardless of the certifications which may be presented on the packaging. Fine flavour cacao is used by craft makers such as us. The focus - as the name implies - is on the flavour journey! Fine flavour cacao beans having generally been expertly fermented, which is crucial to the quality of the end product. We source fine flavour cacao primarily from Central and South America, but we also have a bar from Madagascar in our offering and our hot chocolate is made using beans from Togo. Truly traded means that essentially, we pay anywhere from 2-4 times the fair trade market price for our beans. Sometimes even more! We source fine flavour beans which are traceable and transparent through just 2 select and trusted partners, whose organizations focus on transparent trade and who also work directly with cacao farmers. Working directly with farmers has many benefits. Obviously cutting out as many middle-men as possible means a better price for farmers. But the 2 partners we work with also ensure that farmers have continued access to the market by not only paying prices considerably higher than "fair trade" but also by offering support and educational programs to enhance farming and harvesting methods.

As our work in ice cream has taught us, many certification programs and schemes are not as simple as they appear on face value. There are no perfect certification programs. They provide a good baseline but are not without issues. Quality and ethics are important values for us. As mentioned before, our focus is on truly traded beans. We pay at least 2-4 x more than the fair trade market price for our beans. At a minimum. There is no certification program for craft chocolate makers who source truly ethical beans! Most of the beans we source are organically certified. Our cane sugar is not only certified, but also comes from a regenerative agriculture project in Brazil. More on this via our blog! Keep in mind that certifications are very expensive and involve a lot of paperwork - cacao only grows within 20 degrees of the equator. Generally places which might not have access or finances to apply for certifications despite having a product which naturally grows in a very "organic" environment. We as makers do not have an organic certification.

Currently, all of our chocolate bars are vegan by nature as they are made of only 2 ingredients: fine flavor cacao beans and certified cane sugar. Our chocolate is also lactose free.

Our chocolate is by nature gluten-free however we do not have a 100% gluten-free facility as we use our kitchen for chocolate in the autumn and winter and small batch artisanal ice cream in the spring and summer. For our ice cream shop, we also make our own cinnamon sugar waffles cones and edible ice cream cups. For this reason, our kitchen and equipment might contain traces of gluten. For an intolerance this is no issue, but we respect that some people are highly allergic to gluten and celiac.

We are searching for the ideal commercial space. Ideal relating to space! more space please! (shameless plug: any leads? get in touch with us!) We sell our chocolate bars in our ice cream shop all year round. During the winter months, we offer chocolate pop-ups in this tiny space too but with very limited opening hours, generally on weekends only. In 2020 we won a Bronze Award from the International Chocolate Awards for our 70% bar with cacao from the Maya Mountain cooperative in Belize. in 2021 we were honoured with the following awards from the Academy of Chocolate: - silver for our 70% Maya Mountain from Belize - a bronze award for our 74% bar with means from the Maranon Canyon in Peru - a Gold Award for our 70% Puerto Plata from the Dominican Republic in 2022 we won Bronze for both the 90% and 74% Tumaco from Colombia by the Academy of Chocolate Awards in London
